PureSpelt herbs and vegetable bread sticks
for 8 -10 sticks
500 g of PureSpelt half white flour with 20% grain
1 ½ teaspoons of salt
20 g of yeast, crumbled
Approx. 3 dl of water
1 handful of herbs, e.g. basil, oregano and rosemary, finely chopped
100 g of mixed vegetables, e.g. carrots, courgettes and fennel, shredded into fine strips
3 tablespoons of pumpkin seeds, finely chopped
A little PureSpelt flour for forming

For the dough, mix the flour together with the salt. Stir the yeast into the water, add to the flour together with the herbs, vegetables and chopped pumpkin seeds and knead to a dough. Cover and allow to rise for 2-3 hours.

Gently knead the dough a second time, cover and allow to rise for a further 30 minutes.

Shape the dough: Sprinkle the dough with flour, cut into 8-10 equal strips. Twist each strip of dough several times and lay them on a backing tray lined with baking paper.
Baking
Bake for 20-25 minutes in the middle of an oven preheated to 220°C. Towards the end of the baking time, possibly reduce the temperature slightly. Allow the sticks to cool on a grid.
Tip
The bread sticks are delicious with salads, cheese, cold meats or grilled meats and sausages.
