for approx. 12 sandwiches
500 g of PureSpelt half-white flour
1 1/2 teaspoons of salt
10 g of yeast, crumbled
Approx. 2.75 dl of milk
3 tablespoons of olive or nut oil
1/2 an egg, whisked
Chilli flakes according to taste
For the dough, mix the flour and salt. Stir the yeast into the milk and add to the flour; add the oil. Briefly knead to a soft, elastic dough. Cover and leave to rise at room temperature for approx. 2 hours until it has doubled in volume.
Knead the dough again and allow it to rise further for a brief period.
Cut the dough into 12 equal pieces. Form each piece of dough into 15-20 cm long roll shape, place on a baking tray lined with baking paper. Leave to rise for 5-10 minutes. Brush the dough with the egg and sprinkle with chilli flakes.
Bake for 15-20 minutes in the middle of an oven pre-heated to 180°C. Remove and allow to cool on a grid.
Cut the sandwiches in half along their length and fill with ingredients of your choice. Enjoy while fresh.
