PureSpelt bread snow stars
for 10-12 stars
250 g of PureSpelt white flour
250 g of PureSpelt wholemeal flour
75 g of ground almonds
1 1/2 teaspoons of salt
15 g of yeast, crumbled
Approx. 3 dl of water
Mix the flower, almonds and salt, form a hollow. Mix the yeast with the water and pour into the hollow in the flour mixture. Knead briefly into a soft, pliable dough. Cover and allow it to rise at room temperature for 2-3 hours until it has doubled in volume.
Knead the dough. Allow it to rise for another 30-60 minutes.
Sprinkle flour on a work surface and roll out the dough until it is approximately 1 1/2 cm thick, Cut out the stars and lay them on a baking tray lined with baking paper. Sprinkle the stars with a little flour and press a smaller star into the surface of the dough.
Bake for 15-20 minutes in the middle of an oven pre-heated to 200°C. Remove and allow to cool on a grid.
