PureSpelt lemon Whoopies
for approx. 30 Whoopies
Dough
150 g of butter, soft
100 g icing sugar
1 packet of vanilla sugar
1 pinch of salt
4 egg yolks
200 g of PureSpelt white flour
1 pinch of baking powder
3 tablespoons of cream
Filling
200 g double cream cheese, e.g. Philadelphia
4 tablespoons of icing sugar
1 lemon, grated peel and a little juice
Icing sugar for dusting

Stir the butter until it forms peaks. Add the icing sugar, vanilla sugar, salt and egg yolks, continue to stir until the mixture is light in colour. Sieve in the flour and the baking powder, stir in the cream and blend into a soft dough; put the dough into a piping bag with a round nozzle.

Pipe nut-sized mounds of dough onto a baking tray lined with baking powder.
Baking
Bake for 8-10 minutes in the middle of an oven preheated to 180°C. Remove from the oven and allow to cool.

Filling: Mix all the ingredients into a smooth paste, spoon the mixture into a piping bag with a flat nozzle. Place the mixture in a refrigerator until ready to do the filling.

Squeeze the filling onto one half of the biscuits; place the second half on the filling as covers. Dust the covers with icing sugar and keep cool until serving; enjoy while still fresh.
Suggestion
Whoopies are small sandwiches, cookies or cakes with a sweet filling, which are baked primarily in America. They are available in a wide range of flavours. Chocolate Whoopies are particularly popular.
