PureSpelt apple cake
for 1 spring-form tin, 24-26 cm in diameter
225 g of butter, soft
200 g of sugar
1 pinch of salt
1 apple, peeled and de-cored, grated using a course grater
400 g of PureSpelt white flour
2 teaspoons of baking powder
2 teaspoons of cinnamon or pear bread spices
4 apples, peeled, de-cored, cut into rings
4 table spoons of sugar
A number of flakes of butter
Icing sugar for dusting
To make the dough stir the butter until peaks form, add the salt and eggs, stir until the mixture is light in colour. Mix in the grated apple. Mix the flour, baking powder and spices, add and only briefly stir into the dough, transfer the dough into the baking-paper lined tin, smooth out the surface.
Distribute the apple slices over the dough, distribute the sugar and butter over the apple slices.
Bake for 40-45 minutes in the middle of an oven pre-heated to 180°C. Remove from the oven and allow to cool. Before serving dust the cake with icing sugar to taste.
