PureSpelt Pasta with Carrot Sauce

Preparation time: approx. 20 minutes

Baking or cooking time: approx. 20 minutes

serves 4

Carrot Sauce

1 onion
1 clove of garlic, minced
2 tbsp butter
700 g carrots, grated
100 ml vegetable stock
100 ml cream
400 g tinned tomatoes, chopped
salt and pepper
a few drops of lemon juice

Pasta

400-500 g PureSpelt Pasta, e.g. gnocchi or penne
salted water
a few flakes of butter
chives and carrot tops to garnish

Carrot sauce: fry the onion and garlic in the butter, then add the carrot and fry briefly too. Deglaze with the vegetable stock and cream. Add the tomatoes, cover and then simmer until just cooked. Let the sauce reduce a bit, season, and add some lemon juice to taste.

Shortly before serving, cook the pasta in salted water until al dente, according to the package instructions. Strain and drain well.

Mix the pasta and carrot sauce, place in warmed bowls, garnish and serve.
