PureSpelt Pea and Ricotta Crackers

Preparation time: approx. 40 minutes

makes approx. 24 / required: 2 piping bags with round tips

Ricotta

250 g ricotta
1 tbsp olive oil
a little fleur de sel

Peas

250 g frozen peas
1-2 tbsp vegetable stock
1 tbsp olive oil
1 tsp lemon juice
salt and pepper

3 packages of PureSpelt crackers (approx. 24)
some sprigs of thyme to garnish

Using a mixer, whisk together the ricotta, olive oil, and salt until fluffy, then transfer to a piping bag fitted with a small, round piping tip.

Peas: cook approx. 200 g peas in a little salted water until soft, then drain well. Purée the peas with the vegetable stock, oil and lemon juice, then season. Fill into a piping bag with a small, round piping tip. Defrost the remaining peas and set aside to use for the garnish.

Shortly before serving, arrange the crackers on a plate. Pipe the ricotta and pea mixture onto the crackers, garnish with thyme, honey, and the additional peas, and serve immediately.
