PureSpelt Semolina Fruit Pudding

Preparation time: approx. 40 minutes

Baking or cooking time: approx. 40 minutes

serves 4, 1 baking form approx. 2 L

Semolina

600 ml milk
1/4 tsp salt
1 vanilla bean, cut lengthwise
100 g PureSpelt Semolina
150 g ricotta or quark
3 eggs
4 tbsp pear honey or syrup
butter for greasing

Garnish

400 g mixed fruits, e.g. apricots, raspberries, strawberries, and cherries, in pieces.
2 tbsp flaked almonds
icing sugar, to garnish

Semolina: Bring the milk, salt and vanilla to a boil, then whisk in the semolina. Over low heat cook, whisking constantly, until you have a thick pudding. Let cool slightly and remove the vanilla bean. Whisk in the ricotta or quark, egg yolks and pear honey. Beat the egg whites to stiff peaks and carefully fold them in. Spread into a greased baking dish and top with fruit and almonds.

Baking: Bake in the bottom half of an oven preheated to 180 °C for 30-35 minutes. Remove and let cool. Once it is lukewarm or cool, dust with icing sugar and serve.

Tips

You can vary the fruit and berries, depending on the season.
