PureSpelt semolina mousse with berries
to serve 4-6 people, glasses with a content of approx. 2.5 dl
5 dl of milk
100 g PureSpelt semolina
100 g of sugar
1 lemon, grated peel
1 egg yolk
1 egg white with a pinch of salt, beaten until stiff
2 dl of cream, beaten stiff
Approx. 200 g of fresh berries
4-6 tablespoons of blackcurrant syrup (cassis)
Bring the milk to the boil and while stirring constantly slowly add the semolina. Cook slowly on a low heat for 5-8 minutes to form a porridge. Mix in the sugar and the lemon peel. Stand in a cool place until the mixture solidifies slightly.
Stir the egg yolk into the semolina porridge. Carefully fold in the beaten egg white and cream and then distribute equally in the glasses. Cover the glasses with film and place in the refrigerator for 3-4 hours or overnight.
Immediately before serving, distribute the berries equally in the glasses and dribble with blackcurrant syrup.
Depending on the season, serve with other types of fruit or a fruit compote. Gourmets also enjoy the mousse with a chocolate or caramel sauce.
