PureSpelt Flake Waffles

Preliminary time: approx. 30 minutes resting time

Preparation time: approx. 45 minutes

makes 12 big waffles

Batter

175 g PureSpelt flakes
50 g ground almonds
500 ml milk
3 eggs
4 tbsp sugar
1 1/2 tsp baking powder
1 tsp cinnamon, if desired or a packet of vanilla sugar
50 g butter, melted and cooled
50 g PureSpelt whole wheat flour
pinch salt

Garnish

icing suagr
butter flakes
maple syrup or Birnel (pear syrup)

For the batter: using a food processor blend all ingredients well. Let rest at room temperature for 30-60 minutes.

Heat the waffle iron and grease with a little coconut oil or canola oil. Add the batter in batches and cook until golden brown. Place on plates, garnish and serve while still warm.

Info

The waffles taste best hot from the iron.
You can add different toppings--berries, cut-up fruit, chocolate or berry sauce, ice cream, compotes.
If you have leftover waffles you can quickly reheat them in a frying pan or in the toaster.
