PureSpelt Blood Orange Kernotto Pots

Preparation time: approx. 20 minutes

Baking or cooking time: approx. 40 minutes

Makes 4 300 ml pots/jars

Sweet PureSpelt Milk Kernotto

1 liter milk or half milk half water
a pinch of salt
3-4 dates, pitted and chopped
250 g PureSpelt Kernotto (Kernotto is hulled spelt grains that can be prepared like risotto)
150 ml cream

Garnish

4-6 blood oranges, filleted, plus juice
250 g full fat quark
1/2 tsp vanilla seeds
a few PureSpelt cookies, crumbled

For the Kernotto, bring the liquid to a boil, then add salt, dates, and Kernotto. Simmer for 35-40 minutes stirring frequently, until it thickens to the consistency of risotto. Stir in cream, cover, and let stand for 10-15 minutes.

Pour the Kernotto into glasses or jars (300 ml), trying to keep the top edge of the glass clean.

Garnish: Top with orange segments and juice. Mix the quark and vanilla, then spread over the oranges, and garnish with cookies.

Tips

For the topping, you can use leftover Christmas cookies, or use your favorite granola or chopped nuts.
Substitute blood oranges with other seasonal fruits or berries.
