PureSpelt Almond Rings

Preparation time: approx. 30 minutes

Baking or cooking time: approx. 18 minutes

Dough

500 g PureSpelt puff pastry, store-bought or homemade
a little PureSpelt half-white or white flour for forming

Filling

150 g blanched almonds, finely ground
50 g sugar
1 egg white
5-6 tbsp cream
a few drops bitter almond flavouring, if desired

Garnish

1 egg yolk
a little water or milk
1-2 handful flaked almonds
icing sugar for dusting

Using a little flour, roll out the puff pastry to a rectangle measuring approx. 30 x 50 cm. Chill briefly.

Filling: mix all the ingredients together until spreadable. Spread the filling on one half of the dough, then place the other half on top, so that you get a rectangle of 25 x 30 cm. Chill briefly.

Forming: cut the filled dough into 1.5 cm wide strips. Twist each strip and then form it into a ring. Place on a parchment-lined baking sheet.

Baking: bake for 15-18 minutes in the middle of an oven preheated to 200 °C. Take them out, place them on a cooling rack and let cool. Before serving, dust with icing sugar.
